Chicken Pot Pie



Chicken Pot Pie, you are one of my favorites, Dear. A Southern comfort food like no other. A nice pot pie with a cold glass of sweet tea on a cold night; there is nothin' better.
Ingredients:
Dough:
2 cups flour
1/4 cup of Crisco 
teaspoon of baking soda
1 teaspoon of  baking powder
1 teaspoon salt
About 1/2-2/3 hot water 


Fillin:
Cilantro
shredded Cheese
1 cup of each: chopped carrots, corn, peas and green beans
3 cups Cream of Chicken soup
Chicken breast
Seasonin'
Olive Oil



Directions:
First we will make the dough. 

1. Mix the flour with the baking soda, baking powder and salt.
2. Fork the Crisco shortening in.
Once everything is worked in mix with your hands until it becomes the consistency of corn meal.  
3. Slowly add the hot water.
4. Mix with a wooden spoon and then your hands until the dough looks and feels like pie dough.
5. Place a damp towel over the bowl and let it sit for 20 minutes on the counter.

While the dough is sittin' cook your chicken. I pre-cut mine into bite size pieces. Y'all make sure to season the chicken real good now. I used Slap Yo' Mama seasonin'. It is essentially Cajun seasonin' and Paprika. Heat a skillet or cast iron with a little olive oil and cook the chicken thoroughly.

Now that your chicken is ready set it aside and lets get back to the dough. 
 

1. Roll the dough at and place it firmly in your pot pit dish.
2 Sprinkle the bottom of the crust with chopped cilantro and shredded cheese. About a cup of both, 
3. Now add your Cream of chicken soup. Make sure before you add it that you followed the direction on the can to cook it.
4. Now, in layers begin to add your chicken, the corn, green beans, carrots and peas.
5. Cover with the rest of the dough you rolled out. I like to vent mine in the middle with two slits and press the edges with a fork so it has the crisp lines with then pie is done. 
6. Heat at 350 degrees for 20-30 minutes or until the the pie becomes golden and the fillin' is ready to ooze out.
