Tequila + Topo Chico; #QueenOfTheSouth

“Oh Brenda, I met her for brunch. She thinks she’s so classy but she ate like a taco.” Those were the words that caught my attention while binge watchin’ #QueenOfTheSouth. Brunch, ahh brunch! Everyone knows it my favorite meal of the weekend. I’d even consider it the meal of the south. Our days are spent findin’ ways to enjoy the next one.  Teresa is obviously my spirit animal and no not just because she loves brunch. Even though I’d  bet I could rival her as #QueenOf #Brunch. I love her tell- it -like -it -is attitude. I love how unapologetic she is. And ultimately I love how she #slays.

Over the years I’ve spent much of my time online becomin’ my own boss. Writin’, visitin’ and creatin’ the Texas I want to be a part of and tellin’ the stories of the South through the eyes of those around me. I suppose Teresa and I are alike in that regard. Creatin’ the life we want to live. It’s the Queen in us.

Binge watchin’ the show got me inspired to create a drink I’d be happy to serve at my next brunch or watch party. It combines one of my favorite things, imported from Mexico here to Texas: Topo Chico Mineral water. I give y’all the #QueenOfTheSouth cocktail.

Topo Chico Mineral Water

1.Put ice in a glass .
2. Pour one shot of Tequila in a glass.
3. Top with Topo Chico.
4. Squeeze half a small lime in cocktail.
5. Garnish with a lime wedge

I've said it before and I'll say it again: Summer has to be my favorite time in Texas. Growin' up summer was always spent adventurin' around Texas, Sittin' down by the lake at a bonfire and general loungin'. I joke all the time that I was built for Texas. Anythin' under 80 and I'm cold. I don't just love the heat I embrace it. I'm that person you stare at wonderin' why she's wearin' a hoodie in summer. Heck even now as I sit in type this it's 90+ outside and I'm in a button down. I get it honest from my Daddy I suppose. Or, so they tell me. I'm slightly jealous of the guys that get to drive the Eggo Waffle Bar Trucks around. This summer they'll be goin' all over Texas in support of Eggo Waffles. Now, y'all know my life's goal is gettin' to travel Texas. Like that'd be close to heaven. Y'all make sure to find a location near you. I mean they'll be visitn' over 100 places. No, excuses my Texas frans. Get a waffle and think of me.

Summers spent outside around Texas/Louisiana/Mississippi were always a way of life. Momma, still loves to tell the youngin's how her Step-Farther was retired Air Force and didn't believe children should live inside. Every day they walked to the local neighborhood pool and swam. Every winter they'd go to the froze over pond and skate.

When I picture summer I picture all the campin' trips eatin' s'mores. Even now as an adult they are a must at every trip. Now, s'mores are usually made in the oven in Daddy's old cast iron he didn't mean to pass down to me.

As a kid in Texas we also ate our fair share of Eggo Waffles. I know y'all remember the Leggo my Eggo commercials. As, a kid they were my favorite. I'd beg my parents to buy me waffles 'cause of the commercial. I should write the marketin' team and tell them how great of a job they did.Momma was the director of the Childcare we attended before and after school. She always had to be at the school before 6 am to open the door and load the school buses. That meant we were there as well. And y'all know I ain't never been a mornin' person. So, Eggo were easy. Pop in the toaster, mic or oven and go. I swear we ate those things by the dozens with instant grits slathered in grape jelly. Laugh all you want by that was my childhood. What can I say I am a creature of habit. A few days ago I went to Walmart and visited the Eggo Waffle Bar truck because yes free Eggo Waffles.

Look, at that photo y'all. Just look at it. I am trainin' my Momma well. Brought all my Eggo Waffle Bar Eggo Waffle Bar items on our family vacation and decided to make the family Raspberry Eggo S'mores. I quickly realized I'd left my camera stand. But, Cecelia Ann still got the photo. Y'all give it up one time for Cecelia Anna and Eggo Waffles. Delicious News! Eggo Waffles now have no artificial flavors and colors from natural resource. I then added some Banquet Brown 'N Serve Sausage links I also got at Walmart cause I'm a Texan. Pair them along with the s'mores for some meaty goodness.

Raspberry Eggo Waffle S'mores serves 4 = 1002 calories and 41.3 grams of sugar per serving

Eggo Homestyle Waffles
M&M Minis Milk Cholocate
Cast Iron

1. Grease your cast iron if it isn't already
2. Layer the bottom with Eggo Homestyle Waffles
3.Cover the Eggos in M&M's
4.Layer Marshmallows
5. Cover with raspberries
6. You can then top with more Eggos or not. The choice is yours. I made two batches; some topped and some not.
7. Bake at 350 for a few minutes until everytin' melts. Take and layer with Redi-Whip and there y;all go. Enjoy. Make sure to add the Banquet Brown 'N Serve Sausage Links.
