2012: Instagram Style


I've had Randy Houser and Led Zeplin stuck in my head all day. 
I'm so tired of cooking. We began preparations for New Years Dinner on Sunday night. I love the holidays but down here they can be stressful to prepare for. But now it's time to get ready for NYE Service.

This is me being lazy but here is my review of 2012 in picture form. Looking back I am grateful for all 2012 brought and can't wait for what 2013 has in store.

Green Bean Bundles



This post is probably a hot mess but I don't even care. Probably shouldn't be watchin' the Cowboys game and writing this at the same time. This is a must win game against the Redskins and I'm so nervous I'm liable to throw up the sweet tea I drank earlier.  
Here ya go: All the sweet tea if you know the song of the day... "She's a good girl, loves her mama. loves Jesus and America too. She's a good girl. crazy 'bout Elvis. Loves horses and her boyfriend too. 


Obviously I helped my Grandmas' cook Christmas Dinner. The dish I was most proud of were my Green Bean Bundles. A few weeks back at church I got asked to work in the nursery while one of the ministries had their Christmas Party. The party was pot luck style and I got to eat the DELICIOUS food some of the Southern ladies in my church made. One of the ladies whose son used to be in my class made these Green Bean Bundles that EVERYONE fell in love with. I just had to get the recipe from her. (If y'all didn't know green beans are my favorite vegetable. I even named my car green bean cause she's green like a green bean... I know) Shoutout to Southern Sass. I've been look for some websites that let you edit pictures for free. The website I was using is now charging for a few of the features I use and I am to cheap to pay 5 dollars a month. Do you know how many Sweet Tea's at McDonalds I can buy with that money. Anyways, on her confession post the other day she recommended some websites she uses and I'm in love. Thanks girl.


Ingredients:
2 packages on long cut green beans
Garlic powder
1 cup brown sugar
1/2 cup of melted butter
1/2 package of bacon

Directions:
1. Put the green beans in a large pot. Cover them in water and let them cook until they are tender.
2. Mix the brown sugar in a bowl. If you don't let the butter cool it will start to caramelize the brown sugar. If this happens, don't worry I got ya. Just add a few drops of vegetable oil. (Told y'all I had a Paula Dean Complex)
3. Lay the pieces of bacon out and cook them for a few minutes. I put mine in the microwave because to many things were cooking on the stove Christmas Day. (Shh, don't tell my Granny).You don't want them to fully cooked. Just heated enough that they will stay on the green beans easier. 
4. Now you should be ready to bundle the green beans. Tear the bacon in half and wrap around those bad boys real good, now. I used toothpicks to help them stay in place. (Don't over bundle are you may have a hot mess on your hands and I sure don't want that.)
5. Once they are in the dish you plan to bake them in, drizzle the butter/brown sugar over them real good. 
6. Sprinkle them with Garlic Powder. We love garlic around here but if you wan exact measurement then one to two teaspoons is a good rule of thumb. 
7. Bake them at 350 for about 30-40 minutes checking on them every now and then to re-baaste them. ( Just take a small spoon and drizzle the glaze on them that is in the pan) 
Don't worry if you have extra green beans. I did because some of them were not long enough to bundle properly. I saved some of the glaze in the pan once the bundles were done and they were great the next day with our Christmas leftovers.

Christmas in Pictures: Carriere´ Style


I know I FAILED at the 12 days of recipes. I have a few I'll post before the new year hopefully.

Hey y'all guess what time It is? No it's not, "five o'clock somewhere." Even though I'm sure Kenny would disagree. If you guessed story time then you are so right.

I'm sure I mentioned it before but it bares repeating. My granny is in town for the holidays. (The one that was born in Arkansas, grew up in Mississippi but when she married my Step paw paw she moved the family up north. Hence why my momma grew up in Wisconsin.) She's the same grandma that I get all my cooking an baking from. (She used to own a wedding cake and catering business) (Did I mention Christmas was at our house this year and my sister invited ALL the needy from church. Ok, not really but 15 people were coming and everyone was stressed.) Well, obviously my granny is old and forgetful. I kid y'all not, we went to the grocery store about 5 times in 4 days. Did I mention my Momma and Grandma got into it over sugar and which pans to cook things in.  My granny started yellin' at my Momma, "Cecelia Ann, I made wedding cake for 22 yrs. I think I know that powdered sugar only comes in a 32 ounce bag. Oh Lord, you gonna buy me granulated sugar." She then proceeded to have a melt down. Over sugar y'all.  (This is why she is staying down the road at my Grandma Johnnie's. My Godmothers momma)


I ended up having to take my Grandma to Walmart AGAIN! (Remember where I said she kept forgetting things). As we're about to check out I ask her If she wants a soda. She then goes, "I'll take a Pepsi!" I laughed and was like Granny you're in Texas, no one drinks that around here. The entire line of people busted out laughing. Then some lady comes up to me and showed me where the individual Pepsi's were. Do y'all know that I had to walk to the other side of the store. If you were wondering we drink Dr. Pepper and Coke around here. And yes, everything is called coke around here.

The seester turned 20 on Sunday. She was at our Grandma Johnnies trying to show off the new Jordan's my Momma got her but she failed. (That's my God-brother Chris with her)

Christmas Decorations overload


My aunt got me the 1970's Southern Living Cookbook series. Y'all don't even know how excited I was. (She wanted the 1980's collectors edition but she kept getting out bid. There were other presents but who cares...)




 

 

Family and friends overload... Just realized my momma hid from all the pics. (Grandma Johnnie ended up not being able to come because of the bad weather. We were worried she might fall or something. A few others had to cancel as well because of the icy roads)

 

SNOW! Wait, can I still wear bows at 25? Who cares cause it's Texas, were everything is bigger and we do!

FOOD! The best part of EVERYTHING in Texas!

I call this picture: Hospitality Texas style! The roads ended up icing over. We were worried about a few of people driving back in to  Dallas so we insisted they stayed the night.  We gave up our beds so they could spend the night and we shacked up elsewhere.

Hot Wings

All the sweet tea to whoever knows the song but just know we're out of lemon juice so you'll have to drink your sweet tea plain! "State champs white and blue,  yeah I  remember you. Sure had a hell of a view from way up there."

ARE YOU READY FOR SOME FOOTBALL? Sorry, I couldn’t resist.  If you didn’t know, football is a religion in the South. Come to TEXAS and you’ll see firsthand that ‘round here football is king. Yes, the town of Allen TX,  about 40 minutes from my house, built a 60 million dollar stadium for the high school students to play in every Friday night. Here's a simple recipe for your Super Bowl or playoff watchin' parties. 







Ingredients
  • Chicken Winglests( 2 small packages)
  • 16 Butter ( 2 sticks)
  • Oil
  • Paprika
  • Louisiana Hot Wing Sauce
  • Tony Characera’s
  • Lemon Pepper
  • Black Pepper
  • Salt
  • Garlic Salt/Garlicb Powder (whichever you perfer)
Directions
  1. Use the Salt, Pepper, Tony Cha cha’s and Paprika to make the seasoning for the wings. About 2 tablespoons of the salt and Tony cha cha’s and 4 tablespoons of the Paprika and Pepper.
  2. Now you’re ready to coat the chicken. Season those bad boys good, y’all.

  1. Heat a skillet with oil, about 4 quarts.
  2. Now dip the winglets in a few at a time and cook them until they are done. The secret is not to add flour to the wings.
  3. When the wings are done, remove them from the hot grease and let them dry on a paper towl. After they are dry seperate them by how many you would like for each sauce you are to make.

Now to make the sauces. With most of the sauces posted, the key is even proportions.

Traditional

Mix 4 tablespoons of butter (half a stick) with 4 table spoons of the Louisiana hot wing sauce. Coat the wings and there y’all go.
Garlic


Mix 4 tablespoons of butter (half a stick) with 4 table spoons of the Louisiana hot wing sauce. Coat the wings and there y’all go.

Lemon Pepper






Now this is my personal favorite. Mix 4 tablespoons of butter with 4 tablespoons of lemon pepper seasoning. Or if you’re like me, just keep adding the lemon pepper.
